Ingredients

  • 1 tbsp olive oil

  • 1/3 cup onion, diced

  • 1 chicken bullion cube

  • 1 cup uncooked white rice

  • 2 1/3 cup chicken broth

  • 10 oz can diced tomatoes with green chilis

  • 15 oz can black beans, drained and rinsed

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • Shredded cheese: optional

Directions

  • To a large deeper pan on the stove over medium heat add the oil once hot add in the onion and let cook for 2-3 minutes stirring often.
  • Now add in the uncooked rice, chicken broth, rotel, black beans, and seasonings stir well. Let simmer (stirring occasionally) for 20-25 minutes or until the rice is tender. Top with cheese – optional – and enjoy
