Fridge: Place any of the leftover black bean mixture and avocado salsa into separate airtight container and store them in the fridge for up to 3 days.

Any time I think of burritos I always think of making rice. The beauty of it is that you can make so many different types. Here are a few of my favorites to serve with this burrito recipe. 

  1. Cilantro-lime rice

  4. Plain white rice (I like to use jasmine rice)

You can so serve some refried beans or more salsa and chips for great sides as well!

Ingredients

  • Black bean burrito ingredients
  • 2 – 14 oz Black beans, drained and rinsed

  • 1 tbsp Taco seasoning

  • 10 oz Rotel, drained

  • 1/2 cup Cheddar cheese, shredded

  • 4-6 Medium tortillas

  • Avocado salsa ingredients
  • 2 Avocados

  • 1 Red onion, diced

  • 1 Lime

  • 1 tsp Salt

  • 1 tbsp Minced garlic

  • 1/4 cup Salsa (your favorite tomato salsa)

Directions

  • Burrito Instructions
  • To a medium sized bowl add the drained and rinsed black beans and mash with the back of a fork or potato masher.
  • Stir in the taco seasoning, drained can of rotel, and cheese. Set to the side
  • Avocado Salsa Instructions
  • To a medium sized bowl add in the avocados, diced onion, juice from the lime, minced garlic, and salsa mash with the back of a fork until well combined.
  • Fill each tortilla with the black bean mixture and avocado salsa roll the tortilla and enjoy
