Ingredients for Black Bean Burritos

Vegetarian Black Bean Burritos ingredients:
- Beans: use canned black beans, drained and rinsed
- Seasoning: pick up a packet of your favorite taco seasoning or use homemade taco seasoning
- Tomatoes: a can of Rotel or tomatoes with green chilies, drained
- Cheese: I like to use shredded cheddar cheese but you can also use Mexican blend cheese too
- Tortillas: I use medium sized tortillas but you can use the bigger size if you prefer
Avocado salsa:
- Avocados: ripe and a little soft avocados
- Onion: cut up a red onion or your favorite
- Lime: fresh lime from the produce sections
- Salt: either kosher salt or sea salt will work
- Garlic: I use minced garlic from the can to keep it simple
- Salsa: pick your family’s favorite salsa or fresh pico de gallo
How to make Black Bean Burritos

Prepare black bean mixture:
- To a medium sized bowl add the drained and rinsed black beans and mash with the back of a fork or potato masher.
- Stir in the taco seasoning, drained can of rotel, and cheese. Set to the side

Make the Avocado Salsa:
- To a medium sized bowl add in the avocados, diced onion, juice from the lime, minced garlic, and salsa mash with the back of a fork until well combined.
- Fill the center of the burrito with the black bean mixture and avocado salsa roll the tortilla and enjoy

How to store leftover vegetarian burritos:
Fridge: Place any of the leftover black bean mixture and avocado salsa into separate airtight container and store them in the fridge for up to 3 days.
Counter: Keep the tortillas either on the counter or in the pantry until you are ready to build your burritos the next day.
