Ingredients

  • 2 tbsp olive oil

  • 1.5 lbs beef stew meat, cubed

  • 2.5 tbsp all-purpose flour

  • 1.5 oz packet McCormick Beef Stew Seasoning Mix

  • 3 cups water

  • 1 onion, diced

  • 2 russet potatoes, peeled and cubed

  • 2 sticks celery, sliced

  • 2 large carrots, sliced

Directions

  • In a medium-sized bowl, combine the beef and the flour. Stir to coat the beef in the flour.
  • In a Dutch oven or large pot over medium heat, add the oil. Once hot, add in the beef and sear on all sides.
  • Add in the seasoning packet and 3 cups of water. Scrape the bits off the bottom of the pan. Bring to a boil, drop to a simmer, and let simmer, covered, for 45 minutes. Stir occasionally.
  • Add the chopped vegetables to the pot and stir well. Simmer, covered, for an additional 30 minutes, or until the vegetables and meat are tender. Enjoy!
