Quesadillas are highly requested in my home, but I hate how long it takes to make multiple. I usually have to pull out at least a couple of pans so my kids aren’t fighting over who gets theirs first, and I’m not keen on using more dishes than I have to. Baked Quesadillas are the perfect way to make multiple quesadillas fast!
These Baked Quesadillas are loaded with seasoned ground beef, refried beans, and melty cheese and baked all together in the oven, so you can feed your family in a flash.
Ingredients for Baked Quesadillas
These baked quesadillas are super hearty and have so much flavor. I love making quesadillas with meat and refried beans instead of just plain cheese. To make these baked quesadillas, you’ll need:
- Ground Beef
- Taco Seasoning (I always have this giant container from Amazon in my pantry at home so I never run out)
- Water
- Refried Beans
- Non-stick spray
- Colby Jack Cheese
- Small Flour Taco Tortillas
- Toppings like shredded lettuce, salsa, sour cream, cilantro, and lime (optional)
How to Make Baked Quesadillas
Making these quesadillas is super simple. First, you’ll cook up your ground beef in a pan. I like to use this meat chopper to break up the meat super easily. Once that’s all cooked through, drain out the grease and add the taco seasoning and the water. Stir until the water is evaporated.
Prepare your sheet pan by lining it with parchment paper and spraying it with cooking spray. Next, lay out six tortillas on the baking sheet. Assemble each quesadilla by spreading the beans, cheese and meat on each tortilla. Top with another tortilla to form a quesadilla sandwich.
Bake at 450 for 8-12 minutes, or until the cheese is melty. Serve with your favorite toppings and enjoy!
