Let’s face it, chicken can get pretty boring sometimes. That’s why I am coming to you today with a totally not boring, delicious chicken recipe. I mean, how can bacon wrapped chicken stuffed with cheese ever be boring?

This recipe is a fun, dressed-up chicken dish that is easy enough for a weeknight meal, but nice enough to serve for a party or Sunday dinner. Make this Bacon Wrapped Stuffed Chicken with Potatoes for your next family meal.

How to Make Bacon Wrapped Stuffed Chicken

Making this dish is not hard, but it does take just a little bit of extra time. It is So. Dang. Good.

Prepare the potatoes. Cut the potatoes into thin wedges, placed them on a sheet pan (these are my very favorite) and drizzle with olive oil and sprinkle with salt and pepper set that aside and move over to your stuffed chicken.

Make the cheese mixture. Add the cheddar cheese, mozzarella cheese, cream, cheese, onion powder, garlic powder, and salt and pepper to a small bowl (I love this bowl set that comes in 9 different sizes!). Stir that up until it’s well combined. set that aside. 

Prepare the chicken. Cut a slit lengthwise in each chicken breast a little over halfway through. Do not cut all the way through the chicken breast to the other side. You want one side to be intact. Creating a little pocket to stuff the cheese inside.

Stuff the chicken. Spoon the cheese mixture in the chicken breasts as evenly as possible.

Wrap the chicken. Depending on how long the bacon is wrap 1 to 2 slices of bacon around each of the chicken breasts. make sure you do this tight enough so the bacon holds the chicken together. Place the wrapped chicken on the sheet pan with the potatoes, tucking the ends of the bacon under the chicken, to keep it from unraveling.

Bake. Bake everything for 40 to 45 minutes, or until the chicken is cooked through. Check the internal temperature of the chicken periodically with a meat thermometer. It should reach 165°F. Halfway through baking, flip the potatoes. 

Once the chicken has reached temperature, broil everything for just a couple minutes at the very end to crisp up the bacon and the potatoes. 

Devour. Serve and enjoy!

Ingredients

  • 2 lbs russet potatoes

  • 2 tbsp olive oil

  • Dash salt and pepper

  • 3-4 chicken breasts

  • 1/4 cup cheddar cheese, shredded

  • 1/4 cup mozzarella cheese, shredded

  • 3 tbsp cream cheese, softened

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Dash salt and pepper

  • 6-8 slices of bacon

Directions

  • Preheat oven to 400 degrees F.
  • Line a large sheet pan with aluminum foil and spray with nonstick spray.
  • Cut the potatoes into thin wedges.
  • Place the potatoes on the sheet pan and drizzle with olive oil and sprinkle with a dash of salt and pepper. Stir to coat in the oil and seasonings.
  • To a smaller bowl, add the cheddar cheese, mozzarella cheese, cream cheese, onion powder, garlic powder, and a dash of salt and pepper. Stir to combine.
  • To stuff the chicken, cut a slit lengthwise in each chicken breast a little over halfway through. Don’t go all the way through the chicken breast to the other side though.
  • Spoon this mixture in each of the chicken breasts as even as possible.
  • Depending on how long the bacon is, wrap 1-2 slices of bacon around each of the chicken breasts. Make sure you do it tight enough so the bacon holds the chicken together. Place the wrapped chicken on the sheet pan with the potatoes. Bake for 40 to 45 minutes, or until the chicken is cooked through. Halfway through baking, flip the potatoes. If you want your bacon crispy, broil for 1 to 2 minutes at the very end. Enjoy!
