Beef Bolognese One-Pot

Ingredients
2 tbs olive oil
1 onion, diced
2 ribs of celery, sliced
1 large carrot, chopped
2 tbs tomato paste
1 lb LEAN ground beef, 91% 9%
28oz diced tomatoes
2 tsp Italian seasoning
dash of salt and pepper
3 cups water
1/2 lb fettuccine noodles
1/2 cup parmesan cheese
Directions
- To a dutch oven or large pot add the oil once it’s hot add the onion, celery, and carrots in. Saute for 7-8 minutes or until they are soft.
- Stir in the tomato paste. Then add the ground beef and cook it through.
- Add in the diced tomatoes, seasoning, water, and noodles stir well. Simmer uncovered for 10-18 minutes or until the noodles are cooked.
- Stir in the parmesan cheese and enjoy!

It I needed or wanted this recipe to be for more than 4 people and perhaps double it, should I just add more veggies and noodles or do I need to I double the meat as well? I have a family if four, however usually everyone eats seconds!
