Ingredients
2 large chicken breasts
1/2 tsp garlic powder
1/2 tsp cumin
1/4 tsp salt
1/4 tsp pepper
1 lime juiced
1/2 cup shredded Mexican style cheese
- Southwest Mixture
1 cup frozen corn
1 can black beans, drained and rinsed
4oz can diced green chilis
1/4 cup chopped fresh cilantro
1 diced jalapeno
Directions
- Preheat oven to 375 F
- Slice the chicken beasts in half horizontally now you will have four pieces of chicken.
- Place the chicken in a greased 9×13 baking dish and season the chicken on both sides with the seasonings.
- In a medium sided bow all the ”southwest mixture” ingredients in and stir to combine.
- Evenly pour the southwest mixture over the chicken then drizzle the lime juice on top. Sprinkle the cheese over everything and bake for 30-35 minutes or until the chicken is cooked. Enjoy
