Slow Cooker Coconut Curry

Ingredients
1 lb chicken, cubed
1 white onion, diced
1 tbs minced ginger
1 tbs minced garlic
1/4 cup tomato paste
1.5 tbs garam masala
1 tbs curry powder
1/2 tsp salt
1/4 tsp pepper
14oz coconut milk
8oz tomato sauce
Directions
- In a slow cooker add the ginger, garlic, tomato paste, gram masala, curry powder, salt, pepper, coconut milk, and tomato sauce whisk to combine the ingredients. Now add the cubed chicken and onion, stir well.
- Cook on LOW for 6 hours or HIGH for 4 hours (or until chicken is cooked)
- Once cooked stir well and serve. I like to serve mine over a bed of white rice and naan bread on the side.

Hello! Just made this tonight and it was so delicious and easy to make. We couldn’t wait for it to be done as the house was smelling yummy. There is the perfect amount of spice in this! Thank you !
I’ve made this twice and it is delicious! Even my preschooler and toddler like it. For some reason, the chicken has cooked within 2-3 hours but the onions are still raw at that point. Next time I will probably sauté onions before adding.
I’ve made this curry twice before and it’s come out amazing!! In fact, I have it in the slow cooker now for dinner tonight. 🤩
