Flour Tortilla Loaded Taquitos

Ingredients
2 cups cooked shredded chicken – I used a rotisserie chicken
1/2 cup Mexican style cheese
1/4 cup sliced green onions
1/3 cup salsa
3 tbs sour cream
11oz bag mini street flour tortillas
1/2 cup olive oil
Directions
- In a medium sized bowl add the chicken, cheese, green onions, salsa, and sour cream mix well.
- Wet a couple paper towels and wrap the tortillas in the paper towels microwave for 1 minute. This will help the tortillas not crack and stay in shape when assembled.
- Add 1-2tbs of the chicken mixture in each tortilla and wrap tightly. (Don’t overstuff the tortillas)
- To a deep pan over medium heat add the olive oil and let it get hot, add the taquitos and cook for 1-2 minutes on each side or until golden brown. Remove to a separate plate lined with paper towels. Enjoy

I saw this on a YouTube video, and decided to try it out. It is really good and simple! I subbed the green onions for yellow onion because that’s what I had. Also, I used low carb tortillas, and they didn’t crisp enough, so that’s something I need to change in case I make this again. I’m pretty sure it will crisp better with regular flour tortillas.
These were so great dipped in salsa and sour cream. My family raved ๐
