Ingredients

  • 2 tbs olive oil

  • 1 lb chicken breast cut into strips

  • 1/2 tsp italian seasoning

  • 1/2 tsp garlic powder

  • Dash of salt and pepper

  • 1 tbs butter

  • 1 tbs minced garlic

  • 1/4 tsp crushed red pepper flakes

  • 1 cup white rice – rinsed

  • 2 cups chicken broth

  • 1/4 cup parmesan cheese

Directions

  • In a large sauce pan add the oil once it’s hot add the chicken and seasonings in. Cook the chicken for 3-5 minutes on each side on medium heat until the chicken is cooked through
  • Remove the chicken to a separate plate and set aside
  • Add butter, garlic, and crushed red pepper in cook together for about 30 seconds
  • Add in the rice and saute for about 3 minutes. Add the broth in and bring it up to a simmer, cover for 5-7 minutes (stir frequently) then uncover and continue to simmer for 5 minutes or until the rice is tender. You might need to add more broth in if all of the water evaporates
  • Once the rice is tender add the cooked chicken back in with the parmesan cheese stir to combine then serve

A simple and tasty meal! I did have to make more than one cup of rice to have enough for three people.

  3. Absolutely wonderful, easy meal even I can do ☺️
