Ingredients
4 tbs canola oil
10 corn tortillas
1 can refried beans
- Toppings (optional)
Sliced cherry tomatoes
Shredded lettuce
Shredded sharp cheddar cheese
Sour cream
Lime
Cilantro
Directions
- To a pan over medium heat add the oil once the oil is hot add the corn tortillas, cook for 1-3 minutes on each side until they are golden brown. Don’t overcrowd the pan, I like to do this in batches
- While the tortillas are cooking add the refried beans to a pan and warm them up
- To assemble I like to add a scoop of the beans, tomatoes, cheese, lettuce, sour cream and cilantro! But make it your own and add any toppings you enjoy!
