Slow cooker meals are an absolute LIFESAVER for me. I love throwing a few ingredients in the crockpot in the morning and forgetting about it until I’m greeted with heavenly smells coming from the kitchen. Is there anything better? This Slow Cooker Fiesta Chicken is just about as easy as can be and is so delicious.

What is Fiesta Chicken?

So, this dish originates from a popular Applebee’s main, Fiesta Lime Chicken. This version is a little simpler but just as delicious! Basically, think of tender shredded chicken cloaked in creamy, flavorful, and spicy sauce. It’s so yummy.

I love making this and serving it over chips, but you can also warm up some tortillas and make tacos or burritos too. Or you could even throw it in a bowl with some rice and shredded lettuce for a burrito bowl. This is such a versatile recipe that you and your whole family will absolutely love.

Ingredients for Fiesta Chicken

This recipe only calls for SIX ingredients. That’s it. And most of them are pantry staples. I love this recipe because I usually have all of these cans stocked in my kitchen and chicken in my freezer, so all I have to put on my shopping list is cream cheese.

  • Chicken breasts
  • Taco Seasoning (I like this brand, plus the container is huge so you never run out!)
  • Canned Sweet Corn (you could use frozen corn too, but I like using canned corn for the juices)
  • Rotel Tomatoes and Green Chiles (don’t use just plain diced tomatoes– there won’t be nearly as much flavor)
  • Cannelini Beans (you can use your very favorite canned bean, black beans would be great too)
  • Cream Cheese

How to Make Slow Cooker Fiesta Chicken

Like I’ve said, this recipe is so unbelievably easy. It’s one of those “dump and go” meals that gets me through a hectic week. All you have to do is add your ingredients to a slow cooker, let it cook for 6 hours, shred the chicken (I like to use this meat masher to shred chicken right in my slow cooker), top it with any toppings, and serve!

My Fiesta Chicken is tender shredded chicken cloaked in creamy, flavorful, and spicy sauce. Serve over chips or stuff it into tortillas.

Ingredients

  • 2 large chicken breasts

  • 2 tbsp taco seasoning

  • 1 can sweet corn, undrained

  • 1 can Rotel Diced Tomatoes & Green Chiles

  • 1 can cannellini beans, drained and rinsed

  • 8 oz cream cheese

  • chips or tortillas, for serving

  • Toppings (optional)
  • guacamole

  • shredded cheese

  • lettuce

  • sour cream

  • lime wedges

  • diced tomatoes

Directions

  • Add the chicken to the bottom of a greased slow cooker. Pour all the ingredients in except for the cream cheese. Place the block of cream cheese on top of everything.
  • Cook on LOW for 6 hours, or until chicken is cooked.
  • Once cooked, shred the chicken and mix everything together.
  • Serve over a bed of chips and topped with guacamole, cheese, tomato, lime, lettuce, and sour cream, or make tacos or burritos. Enjoy!

  1. I made this in the instant pot and added the beans and cream cheese after it was done pressure cooking. It was a little too liquidy, but next time I’ll try using thawed chicken instead of frozen. It was still good!

    We enjoyed this today, and I think we’ll get 8-10 servings (not 5) from it. My chicken was about 1.5 pounds. When shredded after cooking, the chicken quickly absorbed the cooking liquid (as others have commented, it looks like too much liquid when you first take off the lid). My husband liked the level of spice, so I boosted just my own portion at the table with sprinkled Mrs. Dash Fiesta-lime seasoning.

  4. This was a great recipe! Thanks for sharing. I just added a few more seasonings and added cornstarch in the last hour of cook time to help thicken up the liquid into a nice thick sauce.

  10. Just made this! Turned out great. It’s a little more liquidy that I wanted but next time I might drained the tomatoes and omit cream cheese. It’s really yummy as is though. Thank you for a great easy recipe!
