Sausage One-Pot Tortellini

Ingredients

  • 1 white onion diced

  • 1 lb mild Italian sausage

  • 1 tbs olive oil

  • 3 tsp minced garlic

  • 3/4 cup chicken broth

  • 14 oz patite diced tomatoes

  • 1/2 cup heavy whipping cream

  • 9 oz fresh tortellini

  • 2.5 cups fresh spinach

  • Salt & Pepper to taste

  • (Optional to thicken sauce 1 tbs cornstarch & 1 tbs water whisked together)

Directions

  • In a large pot heat the oil then add the onion and ground sausage cook the sausage through. Remove any excess grease from the sausage once its cooked
  • Add the garlic and stir for 20 seconds or until fragrant
  • Add broth, diced tomatoes, cream, and tortellini to the skillet stir to combine and bring up to a simmer
  • Cover with a lid and let simmer for 10-15 mins or until tortellini is cooked
  • If you want the sauce thicker add the cornstarch slurry once the tortellini is cooked and stir to combine
  • Add salt and pepper and spinach. Once the spinach wilts down serve

    Stopping in to say (again! I posted as MNCook before) that this is a superb recipe. I’ve made it every 4 months or so since 2021. For us, this is about 6 meal-sized servings, ladled into bowls with crusty bread beside to mop up the last bites of sauce. I do use the suggested cornstarch/water thickener.

  2. This one is crazy delicious and has great, delicate flavor with the pink sauce that forms from the tomatoes and heavy cream- oh my goodness! We both loved it, and I was delighted to enjoy the frozen leftover portions on workdays thereafter. What a treat this meal was! Thank you for exposing me to cooking with new ingredients. I had never cooked with mild Italian sausage before…you are so fun!

  3. This was just ok. May have been the sausage I picked out. Easy to put together but I probably won’t make again.

  4. Lightning fast to make and super flavorful. It’s been added to my family-favorites list and I keep the sausage & tortellini on-hand (frozen) to use when time is short. So much better (and faster!) than going for take-out.

    My husband loves to cook when I give up the kitchen and after we saw this recipe he kept saying all week he was going to make it while I was yard saling

    Oh my gosh! It was awesome, we used TN hot sausage. That was the only change. We will make this again and again
