Ingredients
1 lb ground beef
2 bell peppers, diced
1 zucchini, diced
1 white onion, diced
14oz diced tomatoes
2 tbs taco seasoning
1/4 cup water
3 cups fresh kale or spinach
1 cup shredded cheddar cheese
Directions
- Cook ground beef until its 80% of the way cooked in a large skillet or pot. Remove any excess grease
- Add onions, peppers, and zucchini cook for about 3 minutes or until the ground beef is completely cooked and the vegetables are starting to get soft
- Add diced tomatoes, taco seasoning, and water stir to combine
- Add in the kale or spinach place the lid on and let it simmer for 5-10 minutes or until the kale is completely wilted
- Add in the cheese and serve
