Ingredients for One Pot Teriyaki Chicken and Rice:
- Oil: use your favorite olive oil or avocado oil
- Chicken: I like to use boneless skinless chicken breasts that has been cubed
- Seasoning: use salt, black pepper, minced garlic, and minced ginger
- Vegetables: you will need to have diced red bell pepper, shredded carrots, and frozen peas
- Liquids: use homemade chicken broth or canned chicken broth and soy sauce
- Rice: pick your favorite white or jasmine rice
- Honey: use whatever honey you have on hand
How to make One Pot Teriyaki Chicken and Rice:
To a large Dutch oven or pot on the stove over medium high heat add in the oil once the oil is hot add in the chicken, and season the chicken with the salt and pepper. Let cook for 2 minutes flipping the chicken once.
Stir in the minced garlic and ginger and let cook for 15 seconds (garlic does burn easily)
Stir in the remaining ingredients. Bring up to a simmer over low heat. Let simmer for 18 minutes stirring occasionally until the rice is tender (if the liquid line gets too low while simmering add in 1/3 cup more broth at a time until tender)
