Ingredients for Southwest Chicken Wraps

  • Chicken: frozen crispy chicken tenders, cooked according to package directions.
  • Tortillas: pick burrito sized flour tortillas so they are big enough to hold everything for the southwest chicken wraps
  • Lettuce: I love using romaine lettuce leaves or iceberg lettuce for these southwest wraps
  • Tomatoes: grab medium-sized tomatoes and dice them into bite-sized pieces
  • Corn: use canned corn and drain before using them
  • Beans: use canned black beans and make sure to drain and rinse them before using them
  • Cheese: I like using the Mexican style shredded cheese for these delicious wraps but cheddar cheese works as well

Southwest Dressing:

  • Sauce: mayonnaise is going to be the base for this easy dressing recipe
  • Salsa: pick your favorite tomato salsa
  • Milk: any kind will work — buttermilk even if you’re feeling fancy
  • Seasonings: you will need  taco seasoning and cumin for the southwestern wrap flavor

Good recipe, but I did change it a bit. Instead of plain canned corn, I used Southwest corn. My family does not like mayo so I made a poblano sauce and used that instead. I only filled half of the tortilla with the filling and sauce and this allowed me to roll the burrito perfectly so it didn’t overflow when eaten.

These looked so good, but were actually a real mess when put together. I used large burrito size tortillas with the dressing, and they completely fell apart and no one cared for that. I would use this recipe as a salad next time. Flavors were great!
