Beefy Potato Skillet

Ingredients
1 lb ground beef
1 yellow onion, diced
1 medium sweet potato, diced
1 medium russet potato, diced
1 tbsp taco seasoning
1/2 cup water
1 tbsp minced garlic
6 oz can diced green chilis
14.5 oz can fire roasted diced tomatoes
1/2 cup shredded Mexican style cheese
Optional taco toppings: sour cream, diced tomatoes, avocado, cilantro, and more
Directions
- To a large pan or pot on the stove over medium high heat add the ground beef and onion break the ground beef up and cook it through. Remove any access grease in the pan.
- Turn the heat to low. Add in in the taco seasoning, water, minced garlic, diced green chilis, diced tomatoes, and diced potatoes stir well. Let simmer covered for 20 minutes sitting occasionally.
- Once the potatoes are tender stir in the cheese then top with your favorite taco toppings.

I made this yesterday as part of my “Eat Down the Kitchen” project…aka, eating what’s on hand. I followed the recipe as written, adding a smidge more taco seasoning and…oh lord…this is very tasty and filling…thank you much for this recipe
This is a yummy recipe! I added spinach, acv, added more paprika, cilantro and nutritional yeast flakes. A hit at the house. Thank you for sharing the recipe.
