Ingredients

  • 1/2 lb dry 15 bean soup bag (half of the bag)

  • 1 billion cube

  • 9 cups water

  • 15 oz can potatoes, drained

  • 6 oz frozen mixed vegetables

  • 12 oz bag frozen chopped kale

  • 1 1/2 cups water

Directions

  • Rinse the beans in a strainer to clean them, add the beans into a large pot on the stove over high heat, add in half of the packet of the seasoning mixture that the beans came with, bullion cube, and 9 cups of the water stir well. Bring up to a simmer and let simmer covered for 2 1/2 hours stirring occasionally until the beans are tender, if the liquid line gets too low while simmering add in cup of water at a time until the beans are tender.
  • Dice the canned potatoes into smaller pieces.
  • To the tender beans, add in the potatoes, frozen mixed vegetables, kale, and remaining water stir well. Cover with the lid and let cook for 10 minutes string occasionally, serve
