Mini Egg Bites

Ingredients
1 white onion, diced small
1 cup fresh spinach, chopped small
1 red bell pepper, diced small
13 eggs
1/3 cup milk
1 tsp garlic powder
8 oz diced ham
1 tsp salt
1 tsp pepper
1 tsp onion powder
Directions
- Preheat oven to 350 degrees.
- To a large bowl add in the eggs and milk, whisk well to break the yolks, now add in the rest of the ingredients and stir.
- Spray a mini muffin pan with non stick spray (I like to use a silicone pan so they come out easy) pour the egg mixture in – don’t over flow – bake for 13 minutes or until the egg has set. Repeat until the egg mixture is gone – You will make around 50. Enjoy

Silicon muffin pan / mini muffin pan is ESSENTIAL for these tasty breakfast bites, based on my previous experiences. They don’t release easily from even a well-greased nonstick pan and lots of scrubbing was needed to clean up. Silicon pans solved that.
