Chicken Vegetable Stir Fry

Ingredients
1 tbsp olive oil
1 lb chicken breast, cubed
1 large head of broccoli, cut into smaller pieces
1 red bell pepper, cut into smaller chunks
1 cup carrots, chopped
1/2 tsp salt
1 tsp pepper
1 tbsp minced garlic
1 tbsp minced ginger
- Stir fry sauce:
1 tbsp corn starch
1/3 cup chicken broth
1/4 cup low sodium soy sauce
3 tbsp honey
Cooked rice for serving at the end
Directions
- To a large deeper skillet or Dutch oven add the oil once hot add in the chicken, vegetables, salt, and pepper stir well, cook for 8-10 minutes or until the chicken is cooked through, and the vegetables are tender.
- Make the stir fry sauce now, in a small bowl add in all of the “stir fry sauce” ingredients and whisk well.
- Once the chicken has cooked through and the vegetables are tender stir in the minced garlic and minced ginger, stir in the stir fry sauce, turn the heat to low and let simmer stirring occasionally until the sauce has thickened. Serve over cooked noodles or rice and enjoy!
