One Pot Chicken with Wild Rice

Ingredients
4 cups COOKED wild rice or (white rice or brown rice)
1 tbs butter
1 tbs olive oil
1 lb chicken breast, cubed
1 tsp salt
1/2 tsp pepper
1 tsp paprika
1 tsp dried rosemary
1 tsp dried oregano
1 cup Shredded carrots
1 tbs minced garlic
1 cup frozen peas
1/2 cup half and half
1 cup Shredded Colby jack cheesee
Directions
- To a large pot or Dutch oven on the stove over medium heat add in the butter and olive oil. Once the butter has melted, add in the chicken and mix in half of all the seasonings, stir and cook the chicken until it is about 70% of the way cooked through. Now add in the shredded carrots, minced, garlic, remaining seasonings, frozen peas, and cooked wild rice. Stir this together and let the chicken cook completely through at this point once the chicken has cooked through add in the half and half, and cheese stir well and let the cheese melt down serve and enjoy!

I thought the wild rice was really overpowering with the seasonings so I would make it again with regular rice or maybe quinoa. Otherwise it was good
