Tender chicken, veggies, and lots of spices cozy up with wild rice and lots of cheese. This Slow Cooker Chicken and Wild Rice is the ultimate comfort meal but is also full of nourishing ingredients.

Ingredients for Slow Cooker Chicken and Wild Rice

  • Chicken breast: I always have it on hand!
  • Carrots, celery, frozen peas, and yellow onion: Lots of veggies make this recipe hearty and healthy too!
  • Minced garlic: Gimme all the garlic!
  • Wild rice: The type of rice that you use for this recipe matters. I’ve used this wild rice and it turns out great. Do not use instant wild rice or normal white rice. I highly suggest buying this rice!
  • Chicken broth: Canned, boxed, or bullion cubes will do the job.
  • Salt, pepper, thyme, and oregano: Wild rice pairs so well with thyme and oregano.
  • Shredded cheddar cheese: You could use any kind of cheese that you have. Colby jack or even Mexican blend would be great.

How to Make Slow Cooker Chicken and Wild Rice

This recipe is not hard but it does require a little bit of babysitting. I get messages all the time from people saying their rice in the slow cooker never turns out! I’m here to give you a few tips for success.

To make this recipe, start by chopping the veggies and the chicken. Combine all the ingredients except the cheese and cook on HIGH for 2 1/2 hours.

If you overcook the rice, it will end up super mushy and that’s no good. In order to safeguard from overcooking the rice, check on it about every half hour. You can set a timer on your phone and check up on it periodically.

This recipe cooks on HIGH for two and a half hours. You cannot cook rice on LOW! It will spend way too much time cooking and will be super overcooked. Make sure that you cook rice on the HIGH setting. Each slow cooker varies, but this is the slow cooker that I use.

The rice you use makes a huge difference. For this recipe, I’ve used this wild rice, and it comes out perfectly! I haven’t tried this recipe with other kinds of rice, so I can’t promise that it will turn out. I highly suggest picking up some of this wild rice because it’s so yummy!

Once everything is all cooked to perfection, add the cheese, let it melt, and serve.

Ingredients

  • 1 lb chicken breast

  • 3 large carrots

  • 2 ribs celery

  • 1 yellow onion

  • 1 tbsp minced garlic

  • 1 cup wild rice (not instant wild rice)

  • 3 cups chicken broth

  • 1 cup frozen peas

  • 1/2 tbsp salt

  • 1 tsp pepper

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1 cup cheddar cheese, shredded

Directions

  • Cube the chicken. Dice the carrots, celery, and onion into small pieces.
  • Spray a slow cooker with nonstick spray, then add the cubed chicken diced veggies, garlic, wild rice, chicken broth, peas, and seasonings. Do not add in the cheese at this point. Cook on HIGH for 2 1/2 hours, checking every half hour. Do not cook on LOW or the rice will get mushy.
  • After the rice is cooked, stir in the cheese. Let the cheese melt and serve. Enjoy!

  1. We made this tonight and it was alright. I ended up just using Italian Seasoning instead of just Thyme and Oregano. Overall, I think it would be a solid side dish to a baked chicken instead of chicken cubed in it.

  2. Did I do this right? I used the three cups of chicken broth and it is very watery.

  3. I followed the directions exactly and mine came out more like chicken and rice soup. The celery and chicken cooked but the carrots were still a bit hard, maybe I didn’t cut them small enough? The flavor was okay, better with cheese but I wouldn’t make it again.

  4. This is very tasty! To those making this…It took about 4 hours on high to cook in my crock pot. I think this may be because my crock pot is quite old and may not cook as efficiently as it once did…just a heads up…worth the wait though!

  5. I made a vegan version of this for meal prep this week and loved it!
    I subbed chicken for beans, peas for frozen corn, chicken broth for veggie broth, and thyme + oregano for a juniper spice blend. I was able to use things I just had on hand so no spending! The cool time was good and tasted even better the next day. Thanks!
