Fudge Filled Oat Bars

minutesMy mom’s Fudge Filled Oat Bars were one of my favorite treats growing up. I love the combination of buttery oatmeal crust, soft, fudgy filling, and crunchy M&Ms.

Ingredients
2 cups quick oats
1 1/2 cups all-purpose flour
1 cup brown sugar
3/4 tsp salt
1 cup butter, melted
1 cup pecans, chopped (optional)
14 oz can sweetened condensed milk
1 cup semi-sweet chocolate chips
2 tbsp shortening
1 cup mini M&Ms
Directions
- Preheat oven to 350โ.
- Grease a 9×13 baking dish with non-stick spray.
- To a medium-sized bowl add the oats, flour, brown sugar, and salt. Mix well, then stir in the melted butter until crumbly. Stir in the nuts, if using. Remove 1 1/2 cups of this mixture and set aside.
- Add the remaining mixture to the baking dish, spreading it out and pressing it into the pan to form a crust.
- To a medium-sized saucepan over medium heat, add the sweetened condensed milk, chocolate chips, and shortening. Turn the heat to low and stir until the chocolate chips are melted. Spread over the crust in the baking dish. Sprinkle the remaining 1 1/2 cups of the oat mixture on top of the fudge. Top with the M&Ms.
- Bake for 20-25 minutes. Let cool completely, then slice into bars and enjoy!

Made these today and they’re excellent. In my opinion, the pecans are the best part – I’m adding extra next time!
