Tender, flavorful chicken is served atop buttery, lemony rice. This One Pot Lemon Chicken and Rice is a quick, easy, and mouthwateringly delicious dinner.
Ingredients for One Pot Lemon Chicken and Rice
You only need a few ingredients to make super flavorful chicken. The key to great flavor is the acid (from the lemon juice), the fat (from the olive oil and butter), and the seasonings. I love a good lemon chicken dish!
- chicken breast (you could also use chicken thighs or tenderloins)
- salt
- pepper
- Italian seasoning (I always buy a huge container so I always have this on hand)
- butter
- olive oil
- uncooked jasmine rice
- chicken broth
- lemon juice (make sure to use fresh lemon juice for the best flavor)
How to Make Lemon Chicken and Rice
Start by seasoning the chicken breasts on both sides with a little salt, pepper, and Italian seasoning. To a large Dutch oven or pot over medium-high heat, add the butter and olive oil. Once the butter is melted and the oil is hot, sear the chicken on each side for about 2 to 3 minutes. It will not be completely cooked through and that is okay. Remove the chicken and set it aside.
This is a one pot meal, so use the same pan that the chicken was cooked in. Add the rice, broth, lemon juice, and the rest of the seasonings to the pot. Stir that all up and add back in the seared chicken. Cover the pot with a lid and bring everything up to a simmer. Let that all simmer for about 18-22 minutes, or until the rice is tender and cooked through.
Serve this meal on it’s own, with a side salad, or with some steamed veggies. My Classic Side Salad is a family favorite!
