Sheet Pan BBQ Chicken and Vegetables

BBQ chicken is one of my favorite meals to make in the summertime. Something about chicken right off the grill is so nostalgic! Over here in Utah, half the year is a little too cold outside for a cookout, so I love making BBQ chicken in the oven. My Sheet Pan BBQ Chicken with Vegetables is a sweet and spicy sheet pan dinner that tastes like summer but can be made completely indoors.

Ingredients for Sheet Pan BBQ Chicken

For this recipe, you’ll need:

  • brown sugar
  • salt
  • pepper
  • chili powder
  • onion powder
  • garlic powder
  • olive oil
  • chicken breasts
  • red or yellow onion
  • sweet potatoes
  • head of broccoli
  • honey
  • barbecue sauce

How to Make Sheet Pan BBQ Chicken and Vegetables

Prepare the pan

Line a sheet pan with parchment paper. I absolutely love using this sheet pan. I love the rose gold color! And since I like to keep them nice, I always use parchment paper. I also love how I can just throw it away and not have to scrub off baked-on food.

Bake the potatoes

Combine the potatoes, 1 tablespoon of olive oil, and the salt and pepper on the prepared sheet pan. Bake for 18 minutes at 425 F.

Season the chicken

While the potatoes are cooking, whisk up the seasoning mixture in a small bowl. Sprinkle the seasoning mixture on both sides of the chicken, but don’t use all of it. Reserve a small amount for later.

Bake

Once the sweet potatoes are out of the oven, place the chicken, broccoli, and onions on the pan. Sprinkle the remaining seasoning and olive oil over the veggies. Bake for about 20 minutes, or until the chicken reads 165 F when measured with a meat thermometer.

Glaze

Mix the honey and BBQ sauce together in a small bowl. Brush the sauce on the chicken and bake for 2-3 minutes more, or until the sauce is warmed through. Serve and enjoy!

Ingredients

  • Seasoning
  • 1 tbsp brown sugar

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp chili powder

  • 1 1/2 tsp onion powder

  • 1 1/2 tsp garlic powder

  • BBQ Chicken and Vegetables
  • 2 tbsp olive oil

  • 2 large chicken breasts, sliced in half horizontally

  • 1 red or yellow onion, cut into bite sized chunks

  • 3 large sweet potatoes, peeled and diced

  • 1 large head of broccoli, cut into bite sized pieces

  • Honey BBQ Sauce
  • 3 tbsp honey

  • 1/3 cup barbecue sauce

Directions

  • Preheat oven to 425 degrees F.
  • Line a sheet pan with parchment paper. Place potatoes on the sheet pan and drizzle with 1 tbsp of olive oil and sprinkle with salt and pepper. Bake for 18 minutes.
  • Mix together the seasoning mixture in a small bowl. Sprinkle the chicken on both sides with the seasoning mixture reserving a small amount to use for the vegetables later.
  • Once the sweet potatoes are out of the oven, place the chicken breasts onto the center of the sheet pan, and place the broccoli and onions around the chicken and sweet potatoes. Drizzle the broccoli and onions with the remaining tablespoon of olive oil and sprinkle the remaining seasoning mixture over the vegetables.
  • Bake for 20 minutes, or until the chicken reaches an internal temperature of 165 F.
  • To a small bowl add the barbecue sauce and honey and whisk together to combine. Once the chicken is out of the oven, brush the barbecue sauce mixture over the top and bake for an additional 2 to 3 minutes. Enjoy!

  1. Wow! So tasty! My kids are such picky eaters and my youngest doesn’t tolerate orange sweet potato so I substituted it for white sweet potato. It was such a hit and I let them brush their own chicken with bbq sauce as they seemed fit. So glad to have an easy to clean up meal and full bellies!!
