This Sausage Orzo Soup can help you get out of a dinner rut. Pantry staple ingredients with the addition of orzo pasta and Italian sausage create a fantastic, tasty meal that is super simple to make.
Sausage Orzo Soup Ingredients
Pantry staples like onion, pasta, and canned tomatoes are combined with Italian sausage, fresh spinach, and half and half to create a hearty and comforting soup that’s a little different from your normal routine.
- olive oil
- minced garlic
- yellow onion
- Italian sausage
- Italian seasoning
- salt and pepper
- chicken broth
- canned petite diced tomatoes
- dry orzo pasta
- fresh spinach
- half and half
- Parmesan cheese
How to Make Sausage Orzo Soup
In a large pot or Dutch oven, cook the garlic, onion, and sausage. I really love to make soup with ground meat because it’s so easy. You just cook it right in the pot with everything else and don’t have to shred anything! I like to use this vegetable chopper to chop everything up super fast and easily.
You can soak up some of the grease from the Italian sausage with a paper towel. I like to cover a spatula with a paper towel and blot at the pot to soak up the grease.
Next, add in the seasonings along with the chicken broth, diced tomatoes, and orzo. Let that simmer until the orzo is tender and stir in the spinach and the half and half. Ladle into bowls and top with some parm. Delish!

This was easy and delicious. I used ground pork instead of Italian sausage (it’s what I had on hand) so this may not be necessary for others, but I rounded out the flavor with some ground sage & celery salt to add that slight depth and earthiness that really complements soups, and it was the perfect finishing touch. This soup is just so different from anything else I usually make, I’m excited to make this again!
As a mom of five year old twins I love a one pot meal, especially from Julia. This meal was sooooo delicious and made a good amount for my family and then leftovers! Another amazing recipe!
