Creamy cheesy, carb-y, and full of veggies, this Cheesy Chicken and Broccoli pasta is so easy and a great way to add more veggies to your dinner. I love feeding my kids this meal because they don’t even notice the vegetables. I mean, who doesn’t love anything that’s covered in cheese?
One-pot meals are kind of my lifesaver, especially when they’re filled with yummy things like cheese and pasta, but also have fresh green veggies. I love that everything is cooked in just one pot so I don’t have to clean up 1 million dishes.

Ingredients for Cheesy Chicken and Broccoli Pasta
This recipe uses things that I usually have on hand at my house. I always have some kind of pasta, carrots, some type of green veggie, and loads and loads of cheese in my pantry! So when you’re not sure what to make with the random odds and ends in your fridge, this might be the recipe for you!
- Carrots
- Yellow
- Broccoli (you could use another vegetable, but I like broccoli)
- Olive oil
- Butter
- Chicken breast
- Salt and pepper
- Oregano
- Paprika
- Onion powder
- Garlic powder
- Dried thyme
- Chicken broth (I like to use bullion cubes or chicken base)
- Milk
- Shell pasta (or any other shape)
- Parmesan cheese
- Cheddar cheese

How to Make Cheesy Chicken and Broccoli Pasta
This is a one-pot recipe so really all you need is a cutting board and your pot. If you want to skip chopping all together, get your self this amazing veggies chopper! It makes prep so incredibly fast.
First, chop up your veggies. Add oil to your pot over medium heat. Once that is hot, add the onions, carrots, and broccoli and cook for a few minutes cube your chicken and add that along with the butter to the pot. add in the seasonings as well. Cook for just a few minutes. Don’t worry if the chicken isn’t completely cooked through at this point- that’s OK.
Add in the chicken broth along with the milk and bring everything up to a simmer. Add the dry pasta and let simmer for about 10 minutes, stirring frequently, until the pasta is cooked and tender. Once the pasta is done, stir in the Parmesan and cheddar. Stir everything together for a couple of minutes and let the cheese melt. Ladle into bowls, top with more cheese if you want, and serve.
