Ingredients for Fajita Pasta

I love this pasta because it’s full of pantry staples and a few fresh ingredients. It’s creamy and flavorful and full of veggies too!

  • bow tie pasta: any cut of pasta works, but I like bow tie
  • olive oil
  • heavy cream
  • yellow onion
  • green bell pepper: really you can use any color bell pepper
  • onion powder
  • garlic powder
  • paprika
  • salt
  • pepper
  • can diced tomatoes and green chiles: I used Great Value brand here but also like Rotel — you can buy a big case here
  • parmesan cheese (optional, but delicious)

How to Make Fajita Pasta

First, cook the pasta according to the package directions. Reserve one cup of the pasta water and set aside. Pasta water is full of starch and helps thicken and bind your sauce together when added. So don’t strain out all the water before you’ve reserved some to use later. I like to use a liquid measuring cup to scoop out the water.

Strain your pasta (with my favorite silicon clip on strainer) and set it aside while you make your sauce.

Pull out a large skillet and set over medium heat. Add the oil, onions, and peppers. Sauté for 5-8 minutes or until the veggies are tender. Next, stir in the heavy cream and seasonings and heat to a simmer.

Let the sauce simmer for just a minute and add in the can of diced tomatoes and green chiles. Whisk in the pasta water than you set aside. Once well combined, stir in the cooked pasta and the parm. Scoop into bowls, serve, and enjoy!

Ingredients

  • 12 oz bow tie pasta

  • 1 tbsp olive oil

  • 8 oz heavy cream

  • 1 yellow onion, sliced

  • 1 green bell pepper, sliced

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp salt

  • 1/2 tsp pepper

  • 10 oz can diced tomatoes and green chiles

  • 1/3 cup Parmesan cheese (optional)

Directions

  • To a large pot of boiling water add the pasta and cook according to the box instructions. Reserve one cup of the pasta water, and drain remaining water. Set pasta and pasta water aside.
  • To a large skillet over medium heat, add the oil. Once hot, add in the onion and pepper. Sauté for 5-8 minutes or until the veggies are tender. Stir in the heavy cream and seasonings and heat to a simmer. Let simmer for one minute and add in the diced tomatoes and green chiles, then whisk in the reserved water. Once well combined, stir in the cooked pasta and Parmesan cheese. Enjoy.
