How to Make Five-Ingredient Mexican Casserole

First, you’ll start by softening the onion in a little oil in a skillet. Next, stir in the refried beans.
To a new large skillet (I know, I know, another dish to clean. But just trust the process!) add 2 tablespoons of olive oil over medium heat. Fry the tortillas one at a time in the oil until the get a little crispy. This will help the tortillas to not get soggy when layered with the beans and salsa.
Start the layering process in a 9″ round greased baking dish by placing a tortilla in the bottom of the pan. Spread about 1/3 of the bean mixture across the tortilla, then top with salsa and cheese. Repeat until all of the ingredients are gone.
Bake at 375 F for just 20 minutes, or until everything is warmed through and the cheese is melted. Serve and top with your desired toppings.
Mexican Casserole Toppings
This casserole is great as is, but you can add some toppings at the end to freshen it up a bit or add a little something extra. You can add something fresh and a little crunchy like shredded lettuce, or diced tomatoes or bell peppers. If you want another creamy topping, add guacamole and sour cream. If you like heat, add some more spicy salsa or hot sauce.
