Low Carb Turkey Vegetable Skillet

Ingredients
1 yellow onion, diced
2 medium zucchinis, sliced
1 lb fresh green beans, trimmed and cut into bite-sized pieces
1 tbsp olive oil
1 lb ground turkey or ground beef
1 tbsp minced garlic
1/2 tsp salt
1/2 tsp pepper
1 tsp Italian seasoning
1/2 tsp dried oregano
1/2 tsp paprika
14 oz fire roasted diced tomatoes
1/2 cup chicken broth
1 cup mozzarella cheese, shredded
Directions
- To a large skillet over medium heat add the oil. Once hot, add in the diced onion and turkey. Break the turkey up with a spatula and cook it through.
- Once the turkey is cooked, add in the minced garlic and seasonings. Stir well.
- Turn the heat to low and add in the diced tomatoes, green beans, zucchini, and chicken broth. Stir well and let simmer for about 10-15 minutes, stirring occasionally, until the vegetables are tender.
- Sprinkle the cheese on top, then cover with a lid until the cheese is melted. Enjoy!
