Ham and Noodle One Pot Meal

Ingredients
2 tbsp olive oil
1 white onion, diced
1 lb precooked ham steak, diced
1 tbsp minced garlic
1/2 tsp salt
1/2 tsp pepper
1 tsp dried parsley
1 tsp dried basil
1/2 tsp oregano
1/4 cup all-purpose flour
4 cups chicken broth
2 cups milk
16 oz dry penne pasta
2 cups frozen sweet peas
1/2 cup parmesan cheese
Directions
- To a large pot or Dutch oven over medium heat, add the oil. Once hot, add in the onion and ham and cook, stirring frequently, for 5-7 minutes, or until the ham is a nice golden color.
- Stir in the minced garlic, and all of the seasonings. Stir in the flour and cook for 1 minute, or until the flour turns a golden color. Slowly stir in the broth. Pour it in slowly so no clumps form. Stir in the milk.
- Bring to a simmer, then add in the pasta. Simmer for 15-20 minutes, or until the pasta is cooked. If the liquid gets too low, add 1/2 cup water at a time until the pasta is tender.
- Stir in the frozen peas and let them simmer in the pot for 2-3 minutes. Stir in the parmesan cheese. Enjoy!

This recipe is a win. I made a few changes including:
Had some half and half to use up so used it and milk.
Also, used a 10 oz bag of peas and added a package of sliced mushrooms because yum.
Lastly, my lazy weeknight tip is I bought 2, 8oz packages of diced ham. Had prepped onion in freezer so was a 30 minute meal!
Delicious, I only had 1/2 pound of ham so added in 1/2lb diced mushrooms. Really tasty!
I made this for my family last week. My kids can sometimes be picky with new foods. They loved it and asked me to make it again!
