20 Minute Chicken Broccoli Tortellini

Chicken and Broccoli Tortellini is a classic dish that everyone loves, and it only takes 20 minutes and one pot to make.

Ingredients

  • 1 lb chicken breast, cubed

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp Italian seasoning

  • 2 tbsp olive oil

  • 1 tbsp minced garlic

  • 1 1/2 cups chicken broth

  • 1 cup milk

  • 20 oz refrigerated or frozen cheese tortellini

  • 1 head of broccoli, chopped

  • 1/2 cup parmesan cheese

  • 8 oz cream cheese, cubed

Directions

  • Season the chicken on both sides with salt, pepper, and Italian seasoning.
  • To a large Dutch oven or pot, add the oil over medium heat. Once the oil is hot, add the chicken and cook for 7-8 minutes, or until it is cooked through. Remove the chicken from the pan and set aside.
  • To the same pot you cooked the chicken in, add the minced garlic and cook for about 20 seconds or until fragrant. Add in the broth and milk and bring to a gentle boil. Add the tortellini and broccoli, and let simmer, stirring frequently, for about 5-6 minutes.
  • Turn the heat to low and add in the parmesan cheese and cream cheese. Add the cooked chicken back to the pot. Stir frequently, until the cream cheese melts. Serve and enjoy!
