Sausage Vegetable Pasta

Ingredients
16oz penne pasta
1/2 lb sausage
1/2 green bell pepper, diced
2 cups water
28oz crushed tomatoes
4 tbs tomato paste
1/2 tsp pepper
1 tsp salt
1 tsp Italian seasoning
1/2 tsp dried basil
6oz frozen spinach
Directions
- To a pot of boiling water add the pasta and cook according to the package instructions. Drain and set to the side.
- To a large pot add the sausage and bell pepper break the sausage up and cook it through. Once cooked remove any excess grease in the pan. Now add in the water, crushed tomatoes, tomato paste, and seasonings. Stir well. Let simmer covered stirring frequently for 15 minutes.
- Stir in spinach and let it cook for an additional 2-3 minutes.
- Stir in cooked pasta. Enjoy!

For budget-meals, if you don’t have seasonings in your pantry, look for canned tomatoes that include basil, oregano, etc (Italian seasoning combination).
