Sausage Orzo Italian Soup

Ingredients

  • 1 tbs olive oil

  • 1/2 lb Italian sausage

  • 1/2 white onion, diced

  • 2 large carrots, diced

  • 1 tbs minced garlic

  • 3/4 cup orzo pasta

  • 3 tbs tomato paste

  • 14oz can diced tomatoes

  • 5 cups chicken broth

  • 1/2 tsp pepper

  • 1 tsp salt

  • 1/2 tsp Italian seasoning

  • 1/3 cup heavy cream (optional)

Directions

  • To a large pot or dutch oven add the olive oil, sausage, onion, carrots, and minced garlic. Break the sausage up and cook it through.
  • Stir in orzo and tomato paste
  • Now stir in diced tomatoes, chicken broth, and seasonings. Bring mixture up to a simmer *stir frequently so orzo doesn’t stick to the bottom of the pot* and simmer for 10-12 minutes or until orzo is tender.
  • Stir in heavy cream and enjoy! We like to sprinkle fresh parmesan on top.

    I made this, but I use chicken sausage instead of pork sausage it came out really good ! A bit salty but very tasty thank u Julia !

  2. So I’m gonna post a modification, basically a pasta version rather than soup, that I made cause my wife and I enjoyed it quite a bit. Figured I’d share with anyone interested. The original recipe (my comment from March 30) is good but I tried doubling it to feed some guests plus I accidentally dropped the box of open orzo that I had and I turned it into the following after that mishap:

    1 tbs olive oil
    1 lb Italian sausage
    1/2 sweet onion, diced
    A good number of baby carrots, diced (we just cut what seemed to be a good amount)
    a dash of garlic powder (I don’t buy garlic in other forms)
    3/4 cup orzo pasta
    about 1.5-2 cups of penne (I didn’t measure this out fully)
    6 tbs tomato paste
    2 x 14oz can diced tomatoes
    4 cups chicken broth
    1 tsp pepper
    1 tsp salt
    1 tsp Italian seasoning
    1/3 cup heavy cream

    Pretty much followed the same instructions for the soup that Julia has up top but simmered/boiled for longer that way the penne can soften. My wife actually enjoyed this more than the original recipe.

  5. Yes! Heavy cream and heavy whipping are the same thing. I’m going to make this tonight as well!

  6. I am so excited to make this soup this weekend, but I have a silly question – is the heavy cream you are referring is that heavy whippping cream? I can’t seem to find just heavy cream. Thank you!
