Sheet Pan Eggs For Breakfast Sandwiches

Ingredients
1/2 lb breakfast sausage, COOKED and crumbled
6oz package Canadian bacon OR diced ham
12 eggs
1 cup milk
1 tsp salt
1/2 tsp pepper
Directions
- Preheat oven to 325 degrees
- Cut the Canadian bacon into smaller pieces
- To a large bowl add the eggs, milk, salt, and pepper. Whisk to combine the ingredients.
- Generously grease your 12×16 rimmed sheet pan with non-stick spray. Pour the egg mixture on to the sheet pan. Evenly sprinkle the cooked crumbled sausage and Canadian bacon over the top of the egg mixture on the sheet pan.
- Bake for 15-22 minutes or until the egg has set and no longer jiggly in the center. Enjoy in a breakfast sandwich!

My husband loved the eggs. Made it super simple to meal prep. How do you freeze the eggs, or can you?
I cooked this in an enameled steel 9×13 pan and added chopped scallions, cherry tomatoes and jalapeños. I cut it into 12 squares and made sandwiches with all but 4 squares—ran out of English muffins! But this morning, i reheated a quare with some jack cheese and put it on some toast with guacamole. Delicious!! Super easy recipe and great to customize based on whatever veggies or chesse is on hand!
This is a really convenient way to prep breakfast for busy families on the go. I halved this recipe and it still provided enough breakfast sandwiches for 2 weeks! One for the hubster each morning so he had something to eat in the car on the way to work. Very portable. Thanks Julia!
