Chicken and brown rice casserole

Chicken and brown rice casserole

5 servings

Ingredients:

  • 2 lbs boneless skinless chicken thighs (or use chicken breast)
  • 1 1/2 cups uncooked brown rice
  • 3 cups chicken broth
  • 3 tbsp butter, sliced thin
  • 5 large carrots, sliced
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp paprika
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 cup frozen peas

Directions:

  • Preheat oven to 365 degrees
  • Spray the bottom of a 9×13 baking dish with non stick spray
  • Place the rice on the bottom of the baking dish.
  • Place the chicken over the top of the rice
  • Season the top of the chicken with all of the seasonings. 
  • Pour the broth over the top.
  • Place the carrots in between the chicken and rice.
  • Place the butter over the top.
  • Cover tightly with foil.
  • Bake for bake for 90 minutes or until the rice is tender
  • Remove from the over and stir the peas in. Let sit for 2 minutes and serve. 

Hash Brown Casserole: Perfect for breakfast for dinner

Hash Brown Casserole

6 servings

Ingredients:

  • About 9 hash brown patties
  • 9 eggs
  • 1/2 cup milk
  • 1 cup bacon bits (or cooked sausage)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 cup Mexican style cheese

Directions:

  • Preheat oven to 350 degrees
  • Spray a 9×13 baking dish with non-stick spray
  • Place the hash browns side by side to the bottom of the baking dish.
  • To a medium sized bowl add in the eggs, milk, seasonings, and bacon bits whisk well.
  • Pour the egg mixture over the hash browns.
  • Sprinkle the remaining cheese over the top.
  • Cover with foil bake for 30 minutes
  • Remove the foil bake for an additional 15 minutes or until the center is set.

  • 2 cups instant white rice
  • 20 oz cream of chicken soup
  • 10 oz water
  • 1 lb chicken tenderloins
  • 1 packet onion soup mix
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Directions:

  • Preheat oven to 350 degrees
  • Spray 9×13 baking dish with non stick spray
  • Place the rice, cream of soup, and water into the baking dish stir well until combined.
  • Place the chicken on top of the rice sprinkle the top of the chicken with the onion soup mix and seasonings.
  • Cover with foil bake for 45-50 minutes or until the chicken is cooked and the rice is tender

Chili Pot Pie Casserole

Ingredients:

  • 1 lb ground beef
  • 15 oz can chili beans
  • 15 oz can tomato sauce
  • 1 tbsp chili seasoning
  • 1 box jiffy corn muffin mix – plus the ingredients the mix calls for (1 egg and 1/3 cup milk)

Directions:

  • Preheat oven to 350 degrees
  • To a large pot on the stove add in the ground beef, break the ground beef up and cook it through.
  • Remove any excess grease from the pan.
  • Add in the chili beans, tomato sauce, and chili seasoning, let simmer covered for 5 minutes. 
  •  Spray a 9×13 baking dish with non-stick spray.
  • Add the chili into the baking dish.
  • To a medium sized bowl add in the box of jiffy corn muffin mix and the ingredients the muffin mix calls for (egg and milk) stir well.
  • Spread the corn muffin mixture over the top of the chili.  Bake for 20-25 minutes or until the top is golden brown. Top with your fav toppings.
