Ingredients

  • 6 large burrito sized tortillas

  • 1/2 lb ground beef

  • 1/4 cup water

  • 1/4 cup salsa

  • 1 tbsp taco seasoning

  • 1 cup Mexican style cheese

  • 15 oz can black beans (or pinto beans), drained and rinsed

  • Toppings: sour cream, lettuce, guacamole, tomatoes and more

Directions

  • Preheat oven to 425 degrees
  • To a large pan on the stove add the ground beef break the beef up and cook it through. Once brown and cooked stir in the water, salsa, taco seasoning, and beans. Remove from the heat.
  • Grease a muffin pan with non stick spray
  • Using a cookie cutter or kitchen scissors cut 4-5 inch circles in the tortillas (you should get about 2 circles in each tortilla) place the mini tortilla circles on a plate and microwave for 30 seconds. This will help you be able to put the tortillas in the muffin pan.
  • Press the tortillas in the muffin tin
  • Place this filling in each of the tortillas in the muffin pan. Sprinkle the cheese over the top.
  • Bake for 4 minutes or until the tortilla is golden brown.
  • Top with your favorite toppings
